Sourcing Details
As conflict in Tolima has subsided in recent years, locally organized associations have taken the lead in creating market access through certifications and best organic practices. UNICHAPARRAL has added another layer of differentiation with their focus on gender equality at all levels of the organization. During the harvest, each producer carefully harvests and sorts of cherries before depulping, fermenting, washing, and drying the coffee using their own micro-mills. Traceability, quality control and the certification throughout the post-harvest process along with logistical support for things like storing coffee and preparing it for export are carried out by UNICHAPARRAL.
